The Delicious Strawberry Phirni -Phirni is a soothing dessert best enjoyed cold. It is made with ground rice unlike kheer, which is made with whole rice. To make strawberry phirni, boil milk in a deep non-stick pan. Chop the strawberries and place in another non – stick pan separately. Add 2-3 tablespoons of sugar and cook on low heat. In another bowl, mix 2 cups of cooked ground rice with 2-3 tablespoons of milk and blend this mixture well till it becomes smooth. Add this to the boiling milk and stir. Allow it cook on low heat, stirring a few times in between. Add cardamom powder, some dry fruits like almonds and pistachios and give it a good mix. Cook till the phirni thickens. Add 1 more cup of sugar and stir till it dissolves. Switch off the flame and add the strawberry mixture to this phirni and mix well. Phirni is traditionally enjoyed in earthen pot. Pour this dish into the pots and set aside to cool down to room temperature. Garnish with saffron and dry fruits. Chill in a refrigerator and serve.
